The anchovies from Pujado Solano are a sustainable umami bomb. The fat, flavorful fish are cleaned, salted and marinated according to a secret recipe from Milagros Solano, one of the founders of the company. They are less salty and fuller than the anchovies you usually get, which is a tradition in the area where they are fished and produced. The anchovy fillets are filled with healthy fish oil and omega-3 fatty acids, have no heavy metals and the incredible, balanced taste has to be tried before it is believed. Anchovies are perfect for rounded and delicate tapenades, as flavors in soups and stocks, as an extra facet in marinades or just directly on fresh bread.
At Grøndals we have two types of anchovies. The sour, marinated fillets in vinegar called boquerones, and a salted, much more classic anchovy fillet. The salted anchovy fillets are the classic anchovies you know, but with a small, delicate twist: they are slightly less strongly salted, which gives the flavor of the anchovy fillet more space to unfold. This means a little less salt, but a lot more umami and anchovies. You get some incredibly delicious salted anchovy fillets in a tin here, and they can easily handle a whole serving.
